Grass-Finished Beef Plate Ribs

Our dry aged grass-finished Beef Dino Ribs (also know as Plate Ribs) are impressive! These flavorful ribs are cut from the short plate primal cut. Unlike back ribs, which come from the rib primal and have a thin layer of meat, the plate rib includes part of the chuck attached to the whole short ribs. With rich marbling and a hearty texture, they are perfect for braising, slow roasting, or smoking.
